Apple Crumble

  • 1 cup caster sugar
  • 1 tsp ground cinnamon
  • 1kg (about 6 pink lady) apples
  • 1/3 cup apple juice or water
  • 2 cups plain flour
  • 2 tsp baking powder
  • 200g butter, chopped
  • vanilla ice-cream & caramel sauce, to serve, optional


Preheat oven to 180°C fan forced. Combine 1/4 cup of the caster sugar and 1/2 teaspoon of the cinnamon in a large bowl. Peel, quarter and core the apples. Cut into 3cm pieces. Add to cinnamon sugar, stir until apples are well coated. Pour apple juice or water into base of a lightly greased 8- cup capacity ovenproof dish. Add cinnamon sugar apples.


Sift the flour and baking powder together in a bowl. Stir in the remaining 3/4 cup sugar and ½ teaspoon cinnamon. Add the butter. Using fingertips, rub the butter into the flour mixture until it starts to clump together. Scatter the crumble over the apples.


Place the dish onto an oven tray. Bake for 1 hour, or until the crumble is golden. Serve with vanilla ice-cream and caramel sauce.


No baking powder in the cupboard, you can use 1 cup self-raising flour and 1 cup plain flour.
