Apple, Cucumber & Mint Slaw

  • 4 Lebanese cucumbers, peeled
  • 2 medium unpeeled granny smith apples, thinly sliced
  • 1/2 small (600g) green cabbage, shredded
  • 1/2 cup mint leaves, shredded

Buttermilk Dressing

  • 1/2 cup buttermilk
  • 1/3 cup thick Greek-style yoghurt
  • 1/2 lime, juiced
  • 1 tbs grated fresh ginger
  • 1 tsp Dijon mustard


For the buttermilk dressing, whisk the buttermilk, yoghurt, lime juice, ginger and mustard in a bowl. Season with salt and freshly ground black pepper.


Coarsely shred the cucumber into a bowl. Cut the apple into thin matchsticks add to the cucumber with the cabbage and mint. Pour over half the dressing. Stir until well coated. Pile into a serving bowl, spoon over the remaining dressing just before serving.


To turn this into a light meal, add shredded cooked chicken and toasted sesame seeds.
