Beef Tacos

  • 1 tbs olive oil
  • 500g beef mince
  • 30g pkt taco seasoning
  • ¼ cup taco salsa
  • 435g can refried beans, warmed
  • 10 stand and stuff taco shells, warmed    

  • 2 vine ripened tomatoes, cut into wedges
  • 1 Cos lettuce, shredded
  • Coriander leaves, guacamole & lime wedges, to serve


Heat oil in a large non-stick frying pan over medium-high heat. Add beef and cook, stirring to break up lumps, for 3 minutes. Add seasoning, cook stirring 2 minutes. Add the salsa, bring to simmer. Simmer 5 minutes until thickened.


Spoon beans over warm taco shells. Top with the beef mixture, tomato wedges, lettuce and coriander. Serve with guacamole and lime wedges.
