Vegan Banana Nice Cream
Peel and roughly chop the banana. Place into a snap lock bag. Freeze overnight.
Place the frozen bananas into a food processor. Process until finely chopped. Add the maple syrup, vanilla and coconut cream. Pulse until mixture resembles soft serve.
Spoon or pipe into chilled cups. Drizzle with extra maple if desired. Serve immediately. Alternately, spoon into a container and freeze for 2 hours. Banana nice cream will be firm enough to scoop into cones or bowls.
Banana nice cream will keep in the freezer in an airtight container for 3 months.
You can add handful frozen mango, or berries to the mix in step 2 with the bananas.
